Pork chops with zucchini and mushrooms

Brown sugar pork chops
4 pork chops
Salt and pepper to taste
4 thin onion slices
4 thin lemon slices
1/4 cup packed brown sugar
1/4 cup ketchup or chili sauce
Preheat oven to 350°F. Season pork chops with salt and pepper. Place pork chops in ungreased shallow baking pan. Top each pork chop with a onion slice, a lemon slice, 1 tablespoon brown sugar, and 1 tablespoon ketchup.
Cover and cook for approximately 20 minutes. Can spoon sauce over the chops and cook an additional 30 minutes. Remove from oven and serve.
Makes 4 servings.
Zucchini and mushrooms are simply sauteed with butter and fresh lemon juice. We considered adding garlic and onion, but decided to keep it simple so the kids would enjoy it.
We had baked potatoes with sour cream, fresh bacon bits and chives, too.
Using foil causes a potato to steam and taste somewhat boiled versus baked. Simply wash and scrub a russet potato, pat dry, poke holes into it with a fork, oil the skin and season with kosher salt. Bake in the oven on a baking sheet for an hour at 400 degrees F. Once baked, slit the center and squeeze the ends and it pops open.

Sara: In the picture, the lemon slices were already removed and the sauce was left as is and not spooned over the pork chops. If you’re concerned with appearance, spoon the sauce occasionally during cooking time.
Gabe: Lemon slices were removed because someone made a comment about the taste. I did not spoon the ketchup because I believe in the school of thought “Laissez faire”.
Sara:I love these pork chops. They are sweet and tangy. Initially, I thought ketchup? Yuck. But the taste is like homemade bbq sauce and the lemon and onion give it just enough kick.
Gabe: I like these pork chops also. The kids were ok with it.
Sara:I was relieved Gabe cooked. I was grumpy all day from being sick AGAIN and totally not in the mood to be cooking. This meal is perfect for a weekend meal instead of going out to eat. No leftovers because all the ingredients were bought fresh from our local fruit/meat market, so Gabe bought just what we needed to cover each of our plates.
I was going to make a carrot souffle, but tragedy struck in the kitchen. Just kidding. We did have a little “issue” with our oven heating element. Ally quickly grabbed a phone and her fingers were ready to call 911, but I assured her, everything would be O-K and it was only a small kitchen fire. lol It’s good to know my kids are ready to call 911, stop drop and roll and get out of the house without grabbing their Wii or game boys. We’ll have to work on what an actual emergency is though. No comment on the vast difference (not to be confused with vasa deferentia) between what Gabe grabbed and what I did to put out a fire.
Let’s just say Gabe has a little repair work to do today or I won’t be doing my weekend cooking.
